Rhubarb Cake

  • 1 Yellow Cake Mix - 520 g.

  • 1 cup/250 ml water

  • 3 eggs

  • 1/3 cup/ 85 ml oil

  • 4 cups/1 L rhubarb (chopped)

  • 1 cup/250 ml sugar

  • 2 cups/500 ml whipping cream

Mix cake mix, water, eggs and oil. Pour in large baking dish of 8X12 or 9X13. (May overflow so place cookie sheet below dish)  Sprinkle with rhubarb.  Sprinkle sugar over rhubarb.  Pour whipping cream over sugar.  Bake at 350 F/180 C for 1-1/4 to 1-1/2 hours.
