Green Beans Amandine

  • 2 lb/900 g fresh green beans, trimmed

  • Salt

  • 2 onions, halved

  • 1/3 cup/80 ml butter

  • 1/2 cup/125 ml slivered almonds

  • Freshly ground pepper

Fit food processor with slicing disc. Cut green beans to fit crosswise in feed tube. Pack beans tightly in feed tube so they are lying on their sides. Slice, using firm pressure. Repeat with remaining beans in as many batches as necessary.

Place beans in saucepan; add boiling water to cover. Add pinch of salt, cover and cook over medium heat for 7 to 8 minutes or until tender-crisp. Drain well.

In food processor fitted with steel blade, process onions with 3 or 4 quick on/off turns until coarsely chopped. In large skillet, melt butter; add onions and cook over medium heat until tender, 3 to 4 minutes.

Stir in almonds and beans. Cook for 2 to 3 minutes longer, stirring to mix. Season with salt and pepper to taste.
